Abstract

Agricultural by-products are used to feed ruminants. Cellulose, hemicellulose and lignin are the main components of these by-products. Lignin is not degraded in the rumen but it can be metabolized by some aerobic organisms, like Basidiomicets mushrooms, through their phenoloxidase enzymes. The culture of edible mushrooms like Pleurotus, using agricultural by-products as substrate, is an alternative to produce food of high biological value at low cost. After harvesting the mushrooms, the lignin content of the by-products is reduced and can be used as food for ruminants.
